Best Ever Cookies by Lela Rose:

1 cup butter 1 1/2 cups crushed cornflakes
1 cup sugar 1 cup shredded coconut
1 cup brown sugar 1 cup walnuts or pecans
1 egg 3 1/2 cups sifted flour
1 tsp. vanilla 1 tsp. baking soda
1 cup vegetable oil 1 tsp. salt
1 cup rolled oats

Directions: Preheat oven to 350F. Cream butter and sugar until light and fluffy. Add egg and vanilla, mix, then add vegetable oil and mix again. Add oats, cornflakes, coconut and nuts. Slowly add flour, baking soda, and salt. Mix just until combined…do not overbeat. Form batter into walnut sized balls. Place on ungreased cookie sheet and flatten gently with a fork. If the fork sticks to the dough, dip fork in water and redo. Bake for 15-18 min.
